Meatless Monday: Stuffed Poblano Peppers

In honor of the grass (potentially) turning green this month, I’d love to share a fun and delicious green-inspired meatless meal. If you don’t like the slight heat from the poblano peppers, you can substitute green bell peppers. The same exact cooking process applies.

Dessert with a (Citrus) Twist: Beet and Clementine Pudding

The addition of the clementine’s zest gives the pudding a bright, happy, naturally sweet and citrus-y flavor. 

Meatless Monday: Avocado Toasts with Beet Puree

These babies are not only great in sandwiches, they’re delicious as a side dish, on an antipasto platter, diced up and thrown into an omelet, tossed with a salad…and our kids love them in their school lunches!
